Heat Up Your Menu with Cold Brew Drinks

Cold Brew RecipesLevi Andersen, the Beverage Product Specialist at Kerry Foodservice, sent over some fresh recipes for luscious springtime drinks featuring cold brew coffee.

As we were testing Levi’s recipes, our friends at Monin pointed out that iced coffee’s share of all coffee on menus at U.S. restaurants and coffee houses continues to jump, indicating that consumers’ interest in cold brew beverages spans all four seasons. What’s more, the National Coffee Association’s 2014 Coffee and Ready-to-Drink Coffee Facts report notes that a full 15% of coffee drinkers prefer iced coffee.

“The last three summers, I have seen more and more excitement about cold brewed coffee,” Levi Andersen from Kerry FoodService reports. “There is a lot of opportunity to debut (or day-brew) new menu items.”

In experimenting with Big Train Vanilla Smoothie, Levi learned that adding cold brewed coffee (ratio of 5 oz of coffee to 2 scoops of mix) lets him create frappes with various coffee varietals with unique flavor profiles. Vanilla Cold Brew Whipped Cream

1 oz DaVinci Gourmet Single Origin Madagascar Vanilla Syrup
4 oz brewed Stockton’s Cold Brew Blend (view recipe)
11 oz heavy whipping cream

Directions: Add syrup to cold coffee and then add cream. ISI charge or hand whip until frothy. Pour and serve.

Turkish Hazelnut Cold Brew Frappe

2 scoops Big Train Vanilla Smoothie
0.5 oz DaVinci Gourmet Single Origin Turkish Hazelnut Syrup
5 oz brewed Stockton’s Cold Brew Blend (view recipe)
12 oz ice

Direction: Place Big Train Vanilla Smoothie in blender jar. Add coffee and syrup. Top with ice. Blend until smooth, pour into cup and serve.

Turkish Hazelnut Cold Brew Frappe

2 scoops Big Train Horchata
5 oz brewed Stockton’s Cold Brew Blend
12 oz ice

Direction: Place Big Train Horchata in blender jar. Add coffee. Top with ice. Blend until smooth, pour into cup and serve.

Show Your Customers Some Love this Valentine’s Day!

You might also encourage those who have significant others to make visiting your shop part of their date night by offering a buy-one-get-one deal on drinks later in the evening!

Here are a few love-inspired drinks to try on this special holiday:

White Chocolate Raspberry Mocha
Ingredients:

  • 1 Pump white chocolate sauce
  • 2 Pumps raspberry syrup
  • 2 shots espresso
  • Steamed milk

Pull the shots directly into a cup containing the sauce and syrup, stir gently and add the steamed milk!

Chocolate Covered Strawberry Smoothie
 Ingredients:
  • 5 oz. water
  • 3 oz. Dr. Smoothie Strawberry Concentrate
  • 3/4 (70cc) scoop of Chocolate frappe or iced hot chocolate mix
  • 16 oz. cup of ice
Add the ingredients in the order listed above and blend. Optional: Top with whipped cream, shaved chocolate pieces and a small strawberry.
Hot Cinnamon Twist White Mocha
Ingredients:
  • 3/4 oz. Monin Spicy Red Cinnamon Syrup
  • 1 oz.  White Chocolate Sauce
  • 2 shots of Espresso
  • 8 oz. milk
Tips: Garnish with a cinnamon stick and whipped cream.

Stir together and add whip cream and chocolate drizzle and a sprinkle of cinnamon.

1 Black Tea Bag
5 oz of hot Water
8 oz of Liquid Chai
3 oz of steamed milk
Steep your tea bag for 3 minutes. Add the chai and steamed milk. I like to get a bit of foam on the top. Perfect for grey days full of reading your favorite book.

2 oz. Torani Honey Vanilla
7 oz of Liquid Chai
7 oz of Steamed Milk

Mix together and top with whip cream, and honey drizzle.

Why does a coffee shop need syrups, sauces and specialty beverages?

Average consumers are equipped with knowledge and they are excited about coffee and its appreciation. Apart from coffee rust and other environmental factors that threaten it, the future of the industry is looking great, as demand for high-quality, ethically sourced coffee is growing.

Here at Stockton Graham & Co., we often debate the “right” way to do coffee, from offering single origins as pour overs or espressos, to dressing up a blend with flavored syrups and milk. 1 oz. Peppermint Bark Sauce
5 oz. Torani Real Cream Frappé Base
Ice

Combine ingredients, except ice, in blender. Fill serving glass with ice and pour into blender. Blend until smooth. Pour blended beverage into serving glass. Garnish and serve.

Jack’s Frost Mocha
½ oz. Torani Dark Chocolate Sauce
½ oz. Torani Peppermint Bark Sauce
8oz. milk
2 shots espresso

Add Torani sauce to milk and steam. Add to espresso. Garnish with whipped cream and sprinkle with red sugar

1/2 oz. Torani French Vanilla Syrup
1/2 oz. Torani Pappermint Bark Sauce
8 oz. milk
2 oz. espresso

Add Torani Sauce to milk and steam. Add espresso. Garnish with whipped cream, a caramel drizzle and a sprinkle of raw sugar.

Jingle Spice Chai
1/2 oz. Torani Peppermint Bark Sauce
4 oz. chai concentrate
8 oz. milk

Add Torani Sauce and chai concentrate to steamed milk.

Peppermint Cheesecake Steamer
1/2 oz. Torani Cheesecake Syrup
1/2 oz. Torani Peppermint Bark Sauce
8 oz. milk

Add Torani Sauce to milk and steam. Add to espresso. Garnish with whipped cream.
