WHITE TEA
Like green tea, white tea is heated soon after picking to halt oxidation. The difference is that instead of mature leaves, white tea is made up of the youngest leaves and buds. It has a delicate flavor closest to the actual fresh leaf and brews a very light yellow or pale green.
White tea is difficult to preserve. Its fragility makes it scarce and more expensive than other types of tea. Despite that, demand for white tea has grown in the U.S. thanks to positive media buzz and its use in several ready-to-drink beverages.
