GREEN TEA

by Stockton Graham

Green teas are typically heated by some method after being picked—baked, fired, roasted, steamed, and so on—in order to halt oxidation. These teas showcase more of the plant’s inherent flavor and tend to produce more lightly colored green, brown, and red brews. Green tea is widely drunk in Asian countries, particularly Japan, but has been gaining popularity in the U.S. over recent years.

Much of green tea’s increasing domestic popularity comes from the health claims associated with it. It’s particularly prized for its high content of antioxidants, substances that may help prevent some diseases. Green tea has made its way into many health-conscious products, like smoothie mixes and energy drinks.
