TEA EDUCATION
Tea is brewed from the leaves of Camellia sinensis, the tea plant. More than 3,000 varieties of tea are cultivated in over forty countries worldwide, with India, China, Sri Lanka, Japan, and Taiwan leading the pack.
Like specialty coffee, subtle differences in geography, climate, harvesting, and processing give each tea its own distinct characteristics. In general, tea is classified according to when the leaves are picked, how much they’re allowed to oxidize, and how they’re finally processed. The major types of tea are black tea, green tea, oolong tea, and white tea.
