Every morning thousands of people shuffle in and out of warm cafes en route to the world. Hot cappuccinos and lattes inspire minds and soothe the morning routine, but somewhere in the back of each café is something in control of the entire spectacle. It works persistently, in silence, deprived of appreciation or understanding, but the quality of every café depends on its success. This element is the heart of the café and finds its way into almost every concoction. Success hinges upon this one thing, and it cannot be ignored any longer. What, you may now ask, lies at the core of success? What is it that cannot be ignored? The answer traces its roots to Italy at the turn of the twentieth century…it is espresso. Espresso is much like a regular cup of coffee, but it is all packed into a one ounce shot. The espresso idea spread around the world and became a key ingredient for thousands of new recipes within a decade of its conception.

Drinks such as the cappuccino, latté, americano, iced coffee and more all incorporate the espresso shot. In many cafés, up to fifty percent of drink sales will depend upon the quality of your espresso, which is why Stockton Graham & Co. has invested a great deal of time and energy into ensuring that the espresso you choose will best suit your needs. Espresso is constantly evolving, and we recognize that our pursuit of espresso excellence is unending. We also understand that no two coffee shops are the same, so we offer many different espresso choices, all of which excel in specific areas. Our five most popular espresso combinations include Seda Dulce, Midnight Lotus, San Remo, Milano and Roma. Each of these has a specific purpose and flavor profile, and our wide variety of choices will ultimately translate into quality and customer satisfaction.

Tailoring an espresso to your specific café will eventually distinguish your shop from others, but the initial task of selecting the right espresso can be a bit overwhelming. Should you choose a dark blend that will stand up well in milk based drinks, or a light blend that will appeal to single shot drinkers? At Stockton Graham & Co. we take these sorts of questions very seriously, and we have developed educational programs such as Coffee College and a Barista Certification Program to accompany our time-tested methods of practice.

When new espresso recipes are developed, our roasters evaluate taste and flavor in accordance with standards developed by the Specialty Coffee Association of America (SCAA), The World Barista Championship (WBC) and The United States Barista Championship (USBC). These standards focus primarily on roast level, brewing procedure and flavor profile, we also strongly encourage our customers to employ these methods of evaluation and brewing in their own shops. It is very important that baristas follow guidelines regarding shot dosage, visual characteristics and brew time in order to deliver a more consistent and personalized product. Our team always follows these standards for brewing procedure, and we believe that this scientific approach to espresso also tends to simplify the process of choosing which espresso is appropriate for your needs.
