I bet you didn’t know all teas come from a single plant,
the Camellia sinensis. The thing that differentiates the teas
is not the plant, but the process the leaves go through before
you get it.
In its most common form, the leaves and buds are left to wither
and become what we know as black teas. This is the reddish-colored
tea Westerners are more familiar with.
If steamed immediately after picking, the leaves remain green,
giving us (You guessed it!) green teas. With evidence of health
benefits related to green teas, their market is growing. From
helping prevent cancer and heart disease to reducing body fat,
these teas seem too good to be true.
The oolong teas come from partially withered leaves before steaming.
They are an exotic hybrid of the two methods above. Some say oolong
is the champagne of teas.
